Ingredients
* 2 cups of uncooked rice
* 4 cups water;
* 1 cup of milk;
* ½ cup sugar;
1 cup oil;
* 4 eggs;
1 cup of grated coconut;
1 cup of grated cheese;
* 1 tablespoon of baking powder.
Method of preparation
1. In a bowl put 2 cups of raw rice and soak in water for one day.
2. The next day and drain the rice. Transfer the rice to a blender, add 1 cup milk and blend well. Add ½ cup of sugar, 1 cup of oil and 4 eggs and blend again. Once well emulsified , put 1 cup of grated coconut and 1 cup of grated cheese and mix them together. Turn off the blender combine 1 tablespoon of baking powder and mix again.
3. Place the dough in a round greased baking pan and bake in a preheated moderate oven at 360° F for 35 minutes. Remove from the oven and let cool. Unmold and serve.
